Tucked beside the post office in the heart of historic Pambula, beneath a weathered tin roof and framed by old red brick, green tiles and the ONA Coffee sign — this is where Toast began.
We’re a licensed café built on big-hearted service and the unique rhythm of Pambula life — slow mornings that spontaneously fill with familiar faces.
Our streetside takeaway window has its own social scene, with half the street often clustered there in conversation. There’s a book exchange (and one just for kids), live Sunday music with Jam on Toast, and plenty of pats on the dog-friendly deck.
About The Area
This little coastal village charms with its mid-19th century colonial buildings, long stretch of beach, wildlife-filled wetlands and award-winning oysters. Get a taste for rural life in the sleepy little village of Pambula: one of the less well-known, but most loved, destinations of the Sapphire Coast.
We’ve carved out our corner of Pambula and made a big impact on the community. Since 2019, Toast Pambula has grown into a legacy shaped by its community - a local gem. Inside, there’s a long table for big moments, cosy nooks for long yarns, and a crew who’ll happily share their story and want to hear yours.

Dad joke expert and self-proclaimed overpaid crumpet maker, with a soft spot for chilli sauce and food science. Keeps operations tight and not-so-secretly geeks out on numbers. Goes by the three C’s: consistency, consistency, consistency.

Argentinian Chef with hidden expertise. Fluent in Spanish, English, and Instagram reels. Crushes catering gigs, captures the magic, and pours a mean rosetta.

Direct, dependable, and fuelled by Finnish efficiency – with a heart that feels everything. She is the face of Toast at the door or on the coffee tools, and runs a tight service – with high fives at the end. CrossFit champ, fiercely competitive, hug-lover, and allergic to walnuts and wet blankets.

Has a sixth sense for when someone needs a double shot. Runs the coffee machine like it’s a dance partner and still makes time to check in with the local gossip. She is a true local – known to drive customers back to their homes. -

Toast’s unofficial mum, plumber, fixer, art-collector and chief hype girl. Nicky keeps the wheels turning with big-picture vision and everyday hustle. Loves a good spreadsheet and smashing KPIs. Worships her team. -

Ex-drummer from the UK and source of oddly specific fun facts. Known for his nervous whistle when the kitchen gets wild. Cooks as well at home as he does at work. Always up for a chat. Loves a good bulk buy. -

Café Manager, Eden
Courageous and kind, with hospitality in her bones. Robyn upholds procedures and seeks to improve cafe operations relentlessly. She’ll hold the door for you, find a bikkie for your dog, and will always remember the important parts of your story. -

Head Chef, Eden
Yep, MasterChef winner Roxi. Ex-train driver, she keeps a tight kitchen operation. By trade she’s a thoughtful and creative pastry chef – always adding an element of surprise. A cult following for her baked goods is growing! -

Customer Experience Manager
Hard not to put this guy on a pedestal — he’s our hero behind the scenes and out the front. From mentoring staff to styling grazing tables, Scott keeps it calm, consistent, and full of heart. Volunteer firefighter, pug dad, and the reason so many people feel instantly at home at Toast. -

Second Chef
Cool under pressure and quick with a joke, Sergio is everyone’s mate and a master of the pass. He computes dockets in Spanish, plates with precision, and brings heart to everything he does. An ex-graphic designer with a love of music who takes every opportunity to learn something new.
